These delicious low fat muffins are great for a quick snack or breakfast.
Ingredients
1 cup flour
1/2 cup sugar
1 teaspoon baking soda
1/2 tsp salt
2 eggs
3 Mmdium ripd bananas mashed (1 1/3 cups)
1 1/2 cup bran flakes
1/4 cup chopped walnuts (Optional)
Directions
Preheat oven to 350 F
Mix flour, sugar, baking soda and salt in a large bowl.
Beat eggs in a small bowl and stir in mashed bananas
Add the egg/banana mixture into the flour mixture and still until moistened
Stir in ceral and nuts.
Spray muffin pan with no stick cooking spray and fill each cup 2/3 full.
Bake 30 minutes until golden brown.
